Crispy sea bass in ginger-flavored soy sauce
Ingredients for 4 people
4 sea bass fillets
100 ml of soy sauce
1 tablespoon of rice vinegar
1 teaspoon of sesame oil
1 tablespoon of grated ginger
Pea shoots
Extra virgin olive oil
Salt and pepper
Salt and pepper the sea bass fillets. Heat a non-stick frying pan, pour in a little oil and lay the fillets skin side down in the pan. Cook over a medium heat for about 8 minutes or until the skin is crisp, then turn over the fillets and sear the other side for a minute or so.
Mix the soy sauce with the rice vinegar, sesame oil and ginger juice (put the grated ginger between two spoons and squeeze to release its juices).
Pour the sauce onto the plates as a base, lay the crispy sea bass fillets on top, decorate with pea shoots and serve.
