Red lentil soup

Ingredients (serves 4)
- 200g lentils
- 3 peeled tomatoes
- one onion
- one teaspoon of turmeric
- one teaspoon of cumin
- extra virgin olive oil
- salt
- chilli powder to taste

Method:
Drizzle a pan with a little oil and brown the onion and the cumin. When the fried onion starts to give off a spicy aroma, add the lentils and brown for a few minutes. Then add the peeled tomatoes and the turmeric, mix thoroughly and cover with hot water. Simmer for about 30 minutes until the lentils are tender and the soup starts to take on a creamy consistency. Add salt and chilli powder to taste. Serve hot with croutons.
